To make these cookies, you simply start with a box of yellow cake mix – and four other simple ingredients. Cake mix, eggs, butter, vanilla and chocolate chips. That’s all you need to make these chocolate chip cake mix cookies.

A couple weeks ago, I decided to put a twist on it and make the same recipe with a chocolate cake mix and peanut butter chips. It was a revelation! Why have I never thought of this before? There are so many possibilities for this simple recipe now. There are so many cookie options that all start with a dry cake mix.

How about a spice cake cookie with raisins? Or a devil’s food cookie with butterscotch chips? What about red velvet with white chocolate chips? Or a white cake mix with dark chocolate chips? 1 box of cake mix (traditionally classic yellow but any variety cake mix can be used)
1/2 cup butter, softened
1 teaspoon vanilla
2 eggs
1 cup semi-sweet chocolate chips

How to Make Yellow Cake Mix Cookies:

Preheat oven to 350 degrees.

Soften butter in a glass bowl in the microwave. Microwave for 30-45 seconds to soften the butter and make it easy to stir.

Use a rubber spatula to stir in cake mix, eggs and vanilla. Stir until smooth. Add in chocolate chips.

Use a medium cookie scoop (this is the size I use) to drop cookie dough on an ungreased baking sheet.

Bake at 350 degrees for 10 to 12 minutes. Cookies will be soft.

Allow cookies to cool slightly before removing from cookie sheet. Allow them to finish cooling on a wire rack.

Cookies best enjoyed fresh within a couple days. Store in an airtight container at room temperature. No refrigeration needed. Cookies also freeze great to enjoy later!
