The holidays are one of my favorite times of year. But it can be hard with all of the holiday events not to pack on a ton of extra weight. One of my favorite tricks for getting through the holidays is to make sure there is plenty of healthy food on the table…as well as all the splurge items!

A healthy Waldorf saladmight not seem like the most exciting thing to turn into a holiday dish, but I beg to differ. The crunchiness, color and textures all perfectly compliment each other.

Using jicama in place of some of the apple adds an interesting taste and texture. And we swapped the mayonnaise for whole milk or greek yogurt for a delicious healthy substitute. Plenty of walnuts and and a few dried cranberries finish it out so the kids and husbands will actually eat it.

Adding in a big green leafy salads and other salads like this Waldorf salad and this pear salad with figs and caramelized onions, is one of our tricks for the holidays to keep things a bit lighter. Another thing that we do frequently is we swap which families home we have the big dinner with each holiday. We have a big dinner on the holiday itself with one side of the family. Then the following day we will have a dinner with the other side of the family. That meal is made up of tons of salads, fruit, bread, cheese and wine.

It’s amazing! It’s such an easy fun way to enjoy each other without over indulging.

I have been using their lettuce for years so I was so excited to partner with them on creating some holiday salads that are perfect table centerpieces! Their lettuces come packed in these great clear clamshells and each one has four small heads of artisan lettuce inside of it. So much color and texture for the cost!

It is perfect in this healthy Waldorf salad because the finer micro greens toss perfectly into the salad itself. The bigger lettuce varieties are the ideal background for lining the serving platters with the brilliant greens and deep purples.

Healthy Waldorf Salad Recipe

Ingredients

  • 1 ½ cups diced jicama
  • 1 ½ cups diced apple
  • 1 stalk celery sliced
  • ¼ cup dried sweetened cranberries
  • ¼ cup chopped walnuts
  • 1 cup Tanimura & Antle® Artisan™ Lettuce salad greens – rinsed patted dry and chopped
  • Tanimura & Antle® Artisan™ lettuce whole leaves, to serve on
  • Dressing:
  • ½ cup whole milk yogurt
  • 2 tablespoons apple cider vinegar
  • Salt and pepper

Instructions

  • 1. Whisk dressing ingredients together. 2. Toss dressing with jicama, apple, cranberries, walnuts, and salad greens. 3. Serve immediately on top of a bed of lettuce leaves. 4. Top with additional walnuts and cranberries if desired. Enjoy!

Notes

Important: If preparing ahead of time, wrap the salad tightly in plastic wrap and do not add to a platter until serving time or lettuce leaves will wilt.
