masala lachha paratha recipe | masala laccha paratha | masala lachha parantha with step by step photo and video recipe. paratha recipes are very common across india and are prepared and served for myriad reasons. generally, the parantha’s are prepared by stuffing the spiced vegetables in wheat or plain flour dough. but this recipe is unique with no stuffing but prepared with layers, foldings and also spices topped at each layer to make it one of the flavoured paratha recipe.

i have posted quite a few lachha paratha recipes till now, but this recipe of spicy masala lachha paratha is unique. it is unique for its layered consistency with spice coating in each layer. spice coatings help to completely ignore the curry or any side dish options. adding the spice is subject to individual preference and can vary as per choice. in this, i have added the combination of chilli powder, garam masala, fenugreek leaves to get the flavoured lip-smacking layered bread. i personally feel this combination is well balanced and should be appreciated from everyone, but you can lower or increase the spice heat by adjusting the chilli powder or garam masala.

furthermore, some more additional tips, suggestions and variants to the masala lachha paratha recipe. firstly, while preparing the dough i have used only wheat flour to make it more healthy and digestible. but if you wish to explore, you can add plain flour in 1:1 ratio to make it more layer friendly. you can also make it with 2:1 ratio too. secondly, you may add the spices directly to the flour while kneading the dough. this may help in reducing steps while kneading the dough but may cause an issue while layering. hence i would recommend topping the spice while layering. lastly, these spiced masala paratha’s do not need any extra side dish or gravy as it does have all the flavour within it. but it would taste great with a hint of raita or pickle to make it more lip-smacking.

for atta:

  • 2 cup wheat flour / atta
  • ½ tsp ajwain / carom seeds
  • 1 tsp kasuri methi
  • ½ tsp salt
  • cup milk, warm
  • 2 tbsp oil

for masala mix:

  • 2 tsp chilli powder
  • ½ tsp turmeric
  • 1 tsp cumin coriander powder
  • 1 tsp garam masala
  • ¼ tsp salt
  • 1 tsp amchur

other ingredients:

  • wheat flour, for dusting
  • ghee / clarified butter
  • garlic, finely chopped
  • black sesame
  • oil, for roasting

Instructions

how to make dough for soft & flaky paratha:

  • firstly, in a large bowl take2 cup wheat flour, ½ tsp ajwain, 1 tsp kasuri methi and½ tsp salt.

  • mix well making sure everything is well combined.

  • now add 1 cup warm milk and start to knead the dough.

  • also, add 2 tbsp oil and knead to a smooth and soft dough.

  • cover and rest for 20 minutes.

how to prepare masala mix for layered paratha:

  • firstly, in a small bowl take 2 tsp chilli powder, ½ tsp turmeric, 1 tsp cumin-coriander powder, 1 tsp garam masala, ¼ tsp salt and 1 tsp amchur.

  • mix well and spice mix is ready. keep aside.

how to fold for masaledar laccha parantha:

  • after resting the dough for 20 minutes, continue to knead.

  • pinch a small ball sized dough and roll.

  • dust wheat flour and roll to thin thickness.

  • spread a tsp of ghee over the rolled roti.

  • also, sprinkle 1 tsp of prepared masala mix.

  • now fold zig-zag way and roll spiral.

  • on one side, stick 2 clove garlic and ½ tsp sesame seeds.

  • sprinkle wheat flour and roll gently.

  • roll to slightly thick thickness sprinkling wheat flour if required.

  • now cook on hot tawa keeping the flame on medium.

  • roast both the sides spreading oil on both sides.

  • cook until the paratha turns golden brown and layers separate.

  • finally, crush the masala lachha parathaand enjoy with butter.
